Aromatic style: This wine delivers a dense and very aromatic flesh. A beautiful balance between the fruit and the tannins. It is a search for the purity of fruits according to Mr Jules Chauvet’s principles, a « Pure Origin » wine without chemical additives.

Vinification
Destemmed grapes for an alcoholic fermentation of 3 weeks in the presence of both juice and skins, all native yeasts. Malolactic fermentation in neutral barrel (two wines) with absolutely no SO ², whether in the vineyard, in the winery, in the winemaking, or during bottling. -

In barrel without SO2 in cool cellar during eighteen months. Bottling in September, without addition of SO2. This wine is made without chemical antioxidant (sulphurous Anhydride = SO2) must be stored in a lower temperature at 14°c and shielded from the light.
